Broccoli with Soba Noodles

Ingredients
  1. 1/4 cup soy sauce
  2. 1 Tbl honey
  3. 1 Tbl sesame oil
  4. 1 Tbl cornstarch or arrowroot
  5. 1 Tbl rice wine vinegar
  6. 1/2 pound soba noodles
  7. 2 Tbl olive or safflower oil
  8. 3 small cloves garlic, minced or pressed
  9. 1/8 tsp cayenne powder
  10. 1 head broccoli, cut into florets with as much stem as possible; also
  11. peel and slice thinly as much extra stem as you can
  12. 1/4 cup water
  13. 1/2 cup sake (we use plum mead but you can just use water)
  14. 1 carrot, peeled and grated
  15. 1/2 cup small walnut pieces
Instructions
  1. Bring water to boil in a large pot. While waiting, whisk together soy
  2. sauce, honey, sesame oil, cornstarch or arrowroot, and vinegar until
  3. smooth. Set aside. When the water comes to a boil, add soba noodles
  4. and cook for 8-10 minutes.
  5. After you put the noodles in the boiling water, heat the oil in a
  6. heavy skillet or wok on medium. Add garlic and cayenne and, stirring
  7. constantly, cook until garlic is golden. Add broccoli, water, and
  8. sake, then cook for 4 minutes or so until florets are tender but still bright green. Stir in grated carrots and soy sauce mix. Cook until
  9. liquid thickens, then add walnuts and reduce heat to low.
  10. When noodles are cooked, drain and rinse with warm water and re-drain.
  11. Add noodles to broccoli mix and stir to coat.
