Stonebridge Spinach Fritters
A wonderful and adaptable recipe for spinach. Make them small for appetizers or larger for "burgers" on buns.

  1. 4 cups raw spinach (the equivalent of 4 ounces or 4 handfuls)
  2. 2 eggs
  3. 1 cup bread or cracker crumbs (or Nature's Burger, in a pinch)
  4. 1/4 tsp salt
  5. 1/4 cup minced scallions/green onions or walking onions
  6. 1/4 tsp salt
  7. Pinch of pepper
  8. Pinch of red pepper flakes, opt.
  9. Olive oil for frying
  1. In food processor, pulse spinach until chopped in pieces but not pureed.
  2. Pulse in eggs, crumbs, scallions/green onions, salt and pepper/s until moistened.
  3. Add more crumbs if mixture is too wet.
  4. Heat oil in skillet.
  5. Shape mixture into patties of desired size.
  6. Brown on one side and then the other.
  1. For burgers, serve on a bun with the following condiment: 1 Tbl Tamari mixed into 1/2 cup of mayonnaise.
