Stonebridge Spinach Fritters

A wonderful and adaptable recipe for spinach. Make them small for appetizers or larger for "burgers" on buns.
Ingredients
- 4 cups raw spinach (the equivalent of 4 ounces or 4 handfuls)
- 2 eggs
- 1 cup bread or cracker crumbs (or Nature's Burger, in a pinch)
- 1/4 tsp salt
- 1/4 cup minced scallions/green onions or walking onions
- 1/4 tsp salt
- Pinch of pepper
- Pinch of red pepper flakes, opt.
- Olive oil for frying
Instructions
- In food processor, pulse spinach until chopped in pieces but not pureed.
- Pulse in eggs, crumbs, scallions/green onions, salt and pepper/s until moistened.
- Add more crumbs if mixture is too wet.
- Heat oil in skillet.
- Shape mixture into patties of desired size.
- Brown on one side and then the other.
Notes
- For burgers, serve on a bun with the following condiment: 1 Tbl Tamari mixed into 1/2 cup of mayonnaise.
