Pumpkin Apple Juice Cake
A wonderful cake for using pumpkin from the Stonebridge share! Good with icing or without.

Ingredients
  1. 2 C cooked pumpkin
  2. 2 eggs
  3. 1/2 C apple juice
  4. 1/2 cup oil
  5. 2 Tbsp molasses
  6. 1 & 1/3 C white flour
  7. 1 C whole wheat flour
  8. 1 C sugar
  9. 1 tsp baking powder
  10. 1 tsp baking soda
  11. 2 tsp cinnamon
  12. 1 tsp nutmeg
  13. 1/3 tsp cloves 1/3 tsp salt
For icing
  1. 1 8oz pkg cream cheese - soften
  2. 4 oz butter
  3. 2 tsp vanilla
  4. 2 C powdered sugar
Instructions
  1. Blend pumpkin, eggs, apple juice, oil, and molasses.
  2. In separate bowl, combine dry ingredients.
  3. Combine dry and wet mixes.
  4. Pour into a greased, floured 9x12' pan.
  5. Bake 350, 30 min.
  6. For icing, combine all icing ingredients until smooth. Spread on cake.
Notes
  1. If using frozen pumpkin, thaw first. This cake is another good reason to freeze your cooked pumpkin!
