Pumpkin Apple Juice Cake

A wonderful cake for using pumpkin from the Stonebridge share! Good with icing or without.
Ingredients
- 2 C cooked pumpkin
- 2 eggs
- 1/2 C apple juice
- 1/2 cup oil
- 2 Tbsp molasses
- 1 & 1/3 C white flour
- 1 C whole wheat flour
- 1 C sugar
- 1 tsp baking powder
- 1 tsp baking soda
- 2 tsp cinnamon
- 1 tsp nutmeg
- 1/3 tsp cloves 1/3 tsp salt
For icing
- 1 8oz pkg cream cheese - soften
- 4 oz butter
- 2 tsp vanilla
- 2 C powdered sugar
Instructions
- Blend pumpkin, eggs, apple juice, oil, and molasses.
- In separate bowl, combine dry ingredients.
- Combine dry and wet mixes.
- Pour into a greased, floured 9x12' pan.
- Bake 350, 30 min.
- For icing, combine all icing ingredients until smooth. Spread on cake.
Notes
- If using frozen pumpkin, thaw first. This cake is another good reason to freeze your cooked pumpkin!
