  1. We like to boil equal amounts of sugar and water till all dissolved. Then we drop in super thin slices of peeled beets and cook for one minute. We set them aside to soak for about 15 minutes and drain in a colander. We lay them on parchment paper-lined baking sheet and dry out in a 225 degree oven for about an hour. When they cool, they snapple and crackle a bit. A good yogurt laced with minced onion and a tasty curry powder or paste makes a swell dip. The only potential groan is beet juice on a favorite tee or shorts.
