Creamy lettuce and garlic scape soup

  1. 2 tablespoons butter
  2. 4 garlic scapes, end removed and chopped
  3. 2 tablespoons arrowroot, cornstarch, or flour
  4. 1/2 cup dry white wine
  5. 1 pint vegetable broth
  6. 2 heads soft lettuce , rinsed and chopped
  7. sea salt and freshly ground black pepper to taste
  8. freshly ground nutmeg
  9. 1/3 cup half-and-half
  1. Melt butter in a large saucepan.
  2. Add garlic scapes and cook till tender, about three minutes.
  3. Sprinkle with thickener and cook another 3 minutes, until golden brown.
  4. Add wine and cook another two minutes.
  5. Add broth, lettuce, salt, and pepper.
  6. Bring to a boil; lower heat to medium low and simmer for five minutes, covered.
  7. Remove from heat.
  8. Add nutmeg and half-and-half.
  9. Use an immersion blender or stand blender to purée, leaving little bits. if desired.
  10. Chill and serve with a crusty bread.
  1. Cooks tips and tricks: For an even creamier soup, ad an extra splash of half-and-half just before serving. We have been too hungry to wait for a chill and have eaten it warm. Totally different, good taste.
