Carrot Ginger Soup

Carrot Ginger Soup
Serves 4
Deborah’s remarks: We dream of the day when we score enough carrot thinnings to make this soup. Waiting until they come in for real is pretty sweet, too. This is very tasty and quick enough. Leftovers make a satisfying room temp serving in your box lunch. This bright soup is super healthy with a flavorful kick. The addition of orange juice intensifies the flavor.
