Braised Cauliflower with Saffron and Onions

  1. Olive oil
  2. One medium onion, sliced
  3. 1-2 cloves garlic, minced or diced
  4. 1 cup chopped or whole kalamata olives
  5. Two bay leaves
  6. One head cauliflower, broken into florets
  7. Two cups veggie broth
  8. Pinch saffron
  9. Two cups chopped tomatoes (canned is fine)
  10. One cup chopped parsley
  1. In large pan, saute onion and garlic in olive oil.
  2. Add a cup of chopped or whole kalamatas and two bay leaves.
  3. Add a whole head of cauliflower florets and some more olive oil.
  4. Brown the cauliflower.
  5. Steep saffron in some hot veggie broth.
  6. Add a cup or two of chopped tomatoes.
  7. Stir and cover.
  8. Simmer on med-low for about 40 minutes or so.
  9. Add a cup of chopped parsley.
  10. Cook five minutes more.
