Stonebridge Pickled Red Onions

These onions are amazingly sweet and taste great as a topping on tacos, eggs, fried rice--or pretty much any fresh savory dish!

Ingredients
  1. 1/2 cup apple cider vinegar
  2. 1 cup water
  3. 2 Tbl each sea salt and cane sugar
  4. 2 large red onions
Instructions
  1. Bring apple cider vinegar, water, sea salt, and cane sugar to a boil.
  2. Thinly slice onions to fit upright in pint jars or chop to desired final size.
  3. Place onions in clean pint jars.
  4. Pour boiling liquid over top of onions.
  5. Let cool.
  6. Screw lids on jars.
  7. Place in refrigerator for a couple days before using to infuse onions with flavor.
  8. Refrigerate after opening.
  9. Because these are not canned, use soon.
