Ingredients
  1. 1 1/2 cup milk
  2. 1 cup pumpkin puree (from our stash from Stonebridge, of course)
  3. 1 egg
  4. 2 T. vegetable oil (I used olive oil but I think I'll try coconut oil on the next batch)
  5. 2 cups flour
  6. 3 T. brown sugar
  7. 2 t. baking powder
  8. 1 t. baking soda
  9. 1 t. allspice
  10. 1 t. cinnamon
  11. 1 t. ginger
Instructions
  1. Whisk together milk, pumpkin puree, egg and oil.
  2. Mix together the remaining ingredients.
  3. Stir into pumpkin mixture until just combined.
  4. Heat griddle and cook pancakes in whatever size you like.
Notes
  1. Great with butter and maple syrup or applesauce and yogurt.
