Ingredients
  1. 1 3/4 C flour
  2. 1/2 tsp baking powder
  3. 1/2 tsp baking soda
  4. dash of salt
  5. 1 tsp ground allspice
  6. 1/2 tsp cinnamon
Beat together
  1. 1/2 C honey
  2. 1/2 C oil or butter
  3. 1 tsp vanilla
  4. 2 large eggs, one at a time
  5. Stir in flour mix a little at a time, until smooth.
  6. Add : 1 C shredded steamed beets
  7. 1/2 C currants or raisins
  8. 1/2 C chopped walnuts
Instructions
  1. Sift together all ingredients.
  2. Turn into 8 x 8 (or equivalent) pan.
  3. Bake @ 350ºF until knife comes out clean. My oven takes about 50 minutes.
  4. Cool and frost with Cream Cheese frosting. (I tint it pale pink)
  5. Age improves.
