Deborah's quick and easy informal recipe for when the spinach gets going at Stonebridge! Adapt as needed for number of servings.

Ingredients
  1. Fresh spinach, washed and dried
  2. Eggs
  3. Good double cheddar
  4. A little milk
  5. Black bean/corn salsa
  6. Corn tortillas
Instructions
  1. While half of our spinach share was steaming, we whisked up eggs with a good double cheddar, a little milk, and some black bean/corn salsa.
  2. We tore some corn tortillas for a bottom layer in a prepared baking dish, then half the egg thing, all the steamed spinach, another layer of tortilla, the rest of egg.
  3. We baked it at 375 for 35 minutes.
  4. Had plenty left over for the next day's lunch boxes.
