Southwest Spinach Egg Strata

Deborah's quick and easy informal recipe for when the spinach gets going at Stonebridge! Adapt as needed for number of servings.
Ingredients
- Fresh spinach, washed and dried
- Eggs
- Good double cheddar
- A little milk
- Black bean/corn salsa
- Corn tortillas
Instructions
- While half of our spinach share was steaming, we whisked up eggs with a good double cheddar, a little milk, and some black bean/corn salsa.
- We tore some corn tortillas for a bottom layer in a prepared baking dish, then half the egg thing, all the steamed spinach, another layer of tortilla, the rest of egg.
- We baked it at 375 for 35 minutes.
- Had plenty left over for the next day's lunch boxes.
