Ingredients
  1. 2 Tbl butter
  2. 1 bunch chopped scallions
  3. 4 cups diced cucumbers
  4. 3 cups chicken broth
  5. 1 cup chopped spinach
  6. 1/2 cup sliced potatoes
  7. 1/2 tsp salt
  8. Lemon juice to taste
  9. Pepper to taste
  10. 1 cup light cream
Instructions
  1. Saute scallions in butter until softened.
  2. Add all other ingredients except for cream.
  3. Simmer until potatoes are tender.
  4. Puree and stir in cream.
